Default Newb Q: How to start a map of unknown terrain?

Hi, total newbs here, please can someone point me in the direction of some quick tutorial / info on how to map terrain that you've not encountered before? I mean- how can you start to fill in a grid when you're on a canoe and paddling around a newly discovered island, say? Are there techniques (ancient or modern) to help construct an accurate or even fairly reliable map, gridded or not?

Historically people just did it by eye using their perception, which is why if you look at early maps the land shapes are recognisable but very distorted.
