I don’t know why, but I find it somehow difficult to draw the thick walls like in medieval castles or keeps. It’s like I always leave too little room either for the rooms or the walls. We even visited a local medieval castle nearby and I got a better understanding of how the structures were built, but I still can't get it right. I think I need to get some more practice on a graph paper Any tips?

I think the walls looks great, as does this whole map. However I understand what you mean about space in general. What I think is that maps for games demand space to play in, whereas real-world structures were aimed more at being efficient. A 3-foot wide hallway and a 10'x20' room might work fine in a castle, but it doesn't make as useable a game space.
Unless you're going for claustrophobia, which is fun sometimes…
