Author looking for professional level Fantasy Map!

I am a terrible artist in every sense unless you consider writing a form of art (which I guess I do) so unfortunately I am unable to provide a mock up that would be helpful at all but I do have a disgusting amount of information! So what I am looking for is a map of my setting Varheim, which is made up of 13 smaller continents. I'm not very familiar with cartography so I am unsure what scale would suit me best but all of that can be discussed. As with any art I would commission I'd love your input and thoughts.

Style wise I would prefer something similar to these:

I would like both a printable (for my office!) and web versions, and dimensions can be discussed.
